サンディエゴは West Coast IPA というスタイルの発祥の地だと言われています。
それもあって、当店では、主に、サンディエゴを中心とした West Coast IPAと、Hazy IPAを取り扱っているわけですが、
今日も、「West Coast IPAとサンディエゴの関係」シリーズです。
今日は、2017年の記事ですが、以下のような記載がありましたのでご紹介。
in San Diego new breweries such as Stone,
AleSmith, and the Pizza Port brewpubs focused on experimentation with hops.
Slowly, a regional variation of the IPA style began to emerge.
"サンディエゴでは、Stone Brewing, AleSmith Brewing, Pizza Port Brewing などがホップ実験を進めた。
やがて West Coast IPA という地域スタイルが生まれた。"

IPAというスタイル自体は18世紀のイギリスにルーツがあると言われていますが、それでもこの記事の通り、「カリフォルニアで再発明され」て、West Coast IPA がこうして生まれてきたんだなということがわかりますね。
あとは、
“Balance?” Steele says, “We forget that side of the equation to
maximize hops character.”
「バランス？そんなものは忘れて、ホップを最大化するんです。」
が個人的にはツボでした（笑）
この発想のおかげでおいしいビールが生まれてきてくれたと思うと、ただただ感謝しかありません。
